This 5-course Wine Pairing Dinner will feature the sensational pairing of the creations of Chef Thomas Zippelli and the wines of the great Rioja producer VIÑA OTANO!
Chef Thomas Zippelli has worked at some of the most notable restaurants in the country, including Michelin three-star restaurants Eleven Madison Park in New York and the famous French Laundry in Napa Valley. Since his return to his hometown of Clarksville, Maryland in 2016, Thomas has built relationships with local farmers and markets in the area in order to bring his passion for sourcing the freshest local ingredients to the forefront of Salt & Vine.
Ervigio Adan has a MBA in Viticulture, Oenology and Wine Marketing, and 23 years of experience in the Spanish wine business. He participated in the creation and development of Bodegas Altanza and is now Export Director of Premium Fincas (including Viña Otano, Rioja). Vina Otano’s beginnings date to 1886, when “Grandfather Don Román Montaña” began to produce and age wines. The current generation of grandchildren continue his work in Fuenmayor – La Rioja, in the sub-zone of Rioja Alta, historically known for producing the greatest Rioja, and wines with the capacity to age well.

Sangiovese is unquestionably one of the greatest wine grapes in the world, source of some of the world’s most acclaimed, distinctive and famous wines. Yet Sangiovese remains less well-known than grapes such as Cabernet Sauvignon, Chardonnay, Sauvignon Blanc and Pinot Noir. The reason for its relative obscurity is simple- Sangiovese is more finicky than most illustrious grapes, typically producing great wine only in its ancestral home of Tuscany. In that setting, it is the author of acclaimed wines such as Chianti, Chianti Classico, Vino Nobile de Montepulciano, and of course, Brunello di Montalcino. Sangiovese is also a key component in many of the great “Super Tuscan” wines of Italy, as well as the rare “Gran Selezione” category of Chianti- the pinnacle of Chianti quality and a wine even many Italian wine lovers have never experienced. In this class we’ll sample Sangiovese-based wines from throughout Tuscany, but may also have examples from other Italian regions and the New World as well.
